Now a variety of cooking oils have been suggested by the nutritionists and health experts but when it comes to deep frying, experts still seem to vouch for the efficacy of traditional cooking oils even though many urban households switched to olive or sunflower oil. Hence, people who have given up on ghee completely might just want to think about it again. Refined oils should not be used for frying as they degrade easily whereas oils which are in saturated fats such as ghee or coconut oil are stable during frying.
A polyunsaturated oil, Grapeseed oil is chemically extracted from grape seeds after making wine. It is said that if this oil is consumed in large quantity, it can interfere with the absorption of other nutrients. It lacks in Vitamins C and K, Potassium and copper when compared to eating raw grapes. Grapeseed oil should not be the primary source of fat in your diet. There is less scientific evidence that supports that the oil is healthy. However, it is safe for consumption given its nutritional profile.

Coconut oil was proved effective for treating the cancer patients because of an anti-cancer component present in it called Lauric acid. After two days of treatment with coconut oil, it was found that Lauric acid completely exterminates more than 90 percent of colon cancer cells. Coconut oil is generally used as a hair oil and, in some places, is also used for cooking meals. It decreases the side effects of chemotherapy and improves the life of cancer patients. A Study suggests, cooking food using sunflower oil can reduce the risk of diabetes and heart diseases in people. Sunflower oil has a greater content of linoleic acid which is usually found in oils from nuts and seeds such as poppy seeds, corns, walnut, sesame and sunflower. People with higher linoleic acid in blood have less body fat which lowers the risk of Type II Diabetes and heart diseases. There was found to be a significant decrease in inflammation in case of people who had more linoleic acid content in their blood.
